The scent of ripe wild strawberries and the taste of red fruits, dark cherries and chocolate in the mouth are striking; the sweet soft warmth on the palate is balanced by the fresh acidity that the Barbera grape is made. There is an intense concentration of flavour from the use of the ancient Appassimento technique in the production process, where the branch is cut on the vine and the whole bunch is left to dry in the sun until like raisins.
This increases the fruit concentration and continues to develop substances in the peel wich intesify the spectum of aromas. They have combined this sweetness to the natural acidity of Barbera with a partial whole bunch fermentation. The result is this new wine where fruit and acidity are counterbalanced by a soft light note of ripe fruit.
Half of the wine is aged for 10 months in 600-liter tonneaux barrels. Due to the raisin fruit, the wine has about 7.5 grams of natural residual sugar making it softer.
If you like the Daddy of Italian wines – Amarone, Ripasso or any Appassimento red, then you’ll adore this wine.

|VINIFICATION:||It’s a new wine born after experimenting with the cutting of the branch in the vineyard (“taglio e tralcio”) which increases the concentration and broadens the aromatic bouquet : an ancient technique allowing you to make a light drying keeping the bunch on the plant, thus still in the sunlight. Grapes increase their concentration and continue to develop substances in the skin wich intesify the spectum of aromas.|

Castello Di Cigognola is now managed by Letizia and Gianmarco Moratti’s son Gabriele (“Bebe”) Moratti.
He operates this alongside his other businesses in Fashion, Design and Film.
The Castello Di Cigognola estate has been in his family since the 15th century.
