54 in stock
Italy is making some seriously good Champenoise Sparklers that are giving Champagne a run for its money these days.
The Oltrepo Pavese Metodo Classico D.O.C.G has been awarded the status of an Applellation since 2007. The production zone lies in south of Lombardy’s Pavia province.
This exquisite example, equivalent to a Blanc de Noir in Champagne, was just awarded an incredible 91 Points by Wine Enthusiast Magazine. It has spent 18 to 24 months on the lees; depending on the cuvée of each vintage, the dosage is decided with a blind tasting and it could be Brut, Pas Dosè or both. This kind of approach gives the possibility to express the features of each disgorgement in the best way.
This is a bone-dry, precise wine that combines pristine fruit, vibrancy and knife-like precision. Brilliant straw yellow colour, Intense on the nose, it evokes sweet fruity, delicately floral hints of acacia, and closes with memories of freshly baked pastry. A persistent, fine perlage, which concludes with an elegant citrus trace.
Pair with Crustaceans, Fish-based main dishes, Fish-based pasta or rice dishes, Shellfish or just as an aperitif
