An exquisite dessert-style wine made from Garganega grapes, which appears in the book “1001 Wines to Try Before You Die”

Exploding with rich aromas of mango, passionfruit , honey, dried pineapple, earthiness and brulee that is all supported by a very fresh balanced acidity.

This is a light dessert wine in the style of a Canadian Ice Wine or Sauternes- not sticky or cloying.

The bunches of garganega grapes are left to dry in well aired rooms at the winery. In December when the bunches have the right amount of noble rot: after pneumatic pressing at the end of December, the very sweet must is left to ferment in small Oak barrels after which it is decanted twice and then left to mature for 8 months in the same Barriques (100% Allier oak from the Troncais Forest). It is then aged in bottles for 1 year and has a shelf life of 20 + years. Only 30,000 bottles produced annually. A complex sweet wine which goes well with lobster, excellent with paté de foie gras, cheeses and pastries.

A lovely backbone of fresh acidity makes it perfect to pair with blue cheese. Definitely one to cellar.
