Amarone is the Daddy of Italian wine. Amarone della Valpolicella DOCG Casa Lupo is a heavy weight wine of great structure and elegance, dark red in color with garnet reflections, scented with ripe red berry fruits and sweet vanilla notes, lifted by a floral touch on the intense, rich and long-lasting palate. Sweet on entry with a nice glyceral mouthfeel, then somewhat bitter with noteworthy tannic bite to the lively red berry flavors. Finishes classically dry and with a trace of alcohol-derived heat.
After harvesting by hand, the grapes are air dried until December/January using the ancient Appassimento process where the grapes are air dried until like raisins. The loss of water, as consequence of the drying period, improves the concentration of the grapes. Fermentation and maceration occur in small steel vats, followed by a final fermentation and maturation in oak barrels, where the new wine remains for about 18-24 months. The Amarone ages further in bottle until optimal maturity.
The land is at an altitude of 450 meters above the see level and the soil is made by the alteration of calcareous-fossilifere formations, in particular the red flake and biancone marble.
